Brown Rice Cowboy Caviar Salad

“Cowboy Caviar” is one of the most popular salads for picnics, potlucks, backyard parties and camping trips. I’ve added brown rice because (1) this ain’t my first rodeo and (2) its chewy texture is a perfect complement to the beans, corn and chopped veggies. A hint of spice makes the dressing extra nice!

Cilantro: Love it or Hate it?

Love it or loathe it, cilantro is a bold, unmistakable herb that adds a distinct flavor and freshness to everything from tacos to curries to salads! 

I happen to LOVE it. People like me think it’s peppery and citrusy and others say it tastes like soap. 

So, what gives? Turns out, it’s not just pickiness—it’s genetics! 

Blame the OR6A2 gene. If you have it, your brain detects aldehydesin cilantro—the same compounds found in soap. 

So, when cilantro haters say it tastes like dish soap, they’re not being dramatic (mutters: even though I think they are), it’s literally how their taste buds experience it!

If you’re one of the unlucky ones, you might be wondering: “What can I use instead?” 

Well, there’s no perfect swap, but parsley, basil or even a little lime zest can bring some brightness to a recipe.

Will it taste exactly the same? No. But at least your Taco Salad won’t remind you of laundry day.
