A Bit About Arugula
If you’re not already a fan of arugula, allow me to introduce you to one of my new favorite greens.
You see, I once hated it, but now I love it! Taste buds are funny like that.
Its flavor is bolder than lettuce but not as strong as kale. It’s delicate yet peppery and brings a little zing to every bite.
If standard salad greens are like your quieter, reserved friends, then arugula’s your crazy pal who grabs the mic on karaoke night and belts out Born to Be Wild!
In the UK, arugula goes by the name “rocket,” which makes sense when you taste it. It’s boldness acts like a salad launchpad.
It’s also loaded with vitamins A, C and K, plus folate and antioxidants, so you get a nice little nutrition boost while you’re devouring your salad.
Unlike hearty greens like kale, arugula’s leaves are tender—which means it’s best to toss them with dressing right before serving so they don’t go soggy.
For the same reason, arugula benefits from light vinaigrettes versus heavy, creamier dressings.
But here’s why I love it most—that peppery zip is the perfect balance for sweet ingredients like blueberries, nectarines, strawberries or roasted beets.
I always buy BABY arugula, since it’s not as strongly flavored as regular arugula, and I like to mix it with other greens. Plus, baby arugula’s curvy leaves are so pretty in a salad.
So, why settle for boring greens when you can add a little ROCKET fuel to your salad?
