The Iconic Cobb Salad

with chicken, bacon, eggs and avocados

The famous Cobb salad is often served with a simple red wine vinaigrette, since heavy salads usually benefit from lighter dressings. I’ve added minced shallots and a hint of creaminess from light mayonnaise in my version. Ranch dressing lovers might prefer its stronger flavor on a Cobb salad and balsamic die-hards won’t be disappointed if they stick with their favorite, too. I say choose the dressing you love and go for it!

A Cobb salad is the epitome of a fully loaded salad. I mean, just look at the photo! 

I’m sure you understand why it’s labeled “Splurge-Worthy” and why I don’t recommend it goes on regular meal-planning rotation.

But, hey! Every once in a while, it’s worth the indulgence.

Some assembly is required, but once you get all the pieces of the salad puzzle organized, it’ll come together quickly. 

A few tips:

If you don’t feel like cooking chicken yourself, grab a rotisserie chicken and cut it up. 

You can even take another shortcut and buy those pre-fab hard-boiled eggs. 

Yes, they’re simple to make at home, but peeling them is another matter! 

I never recommend pre-cooked bacon, because it’s just dry and kinda sad. Sorry. You need cook that yourself! I look for nitrate-free bacon, which shouldn’t be hard to find.

When it comes to the avocado, make that your very last step, since avocados turn brown quickly. Squeezing a bit of fresh lemon juice over the diced avocados will slow down the brown.

Finally, try regular balsamic vinegar instead of red wine vinegar in the dressing. 

It’s a totally different flavor but absolutely delicious!
