Tabbouleh with a Twist

A salad for herb lovers

Fluffy, light and refreshing, Middle Eastern tabbouleh is a super-green, herby salad loaded with fresh parsley and mint, with a small amount of grain thrown into the mix. My “Greta-cized” recipe might not be considered authentic, but it’s still super-scrumptious, blending elements of traditional Lebanese tabbouleh with hints of its Moroccan counterpart. A luscious, lemony dressing makes this super-healthy salad herbaceously delicious!

What to Serve with Tabbouleh

Tabbouleh is a super-green salad—yet contains no leafy greens! It’s essentially a parsley and mint salad, and I can’t get enough of it.

BUT only when it’s my bright and fresh homemade version. Store-bought tabbouleh is just “okay,” but feels a bit like yesterday’s news.

Sometimes I eat a giant bowlful on its own for lunch, but as a side dish, here’s what I’d pair with it:

Grilled Proteins: It’s a perfect match for grilled chicken, lamb, beef kebabs or even grilled fish, like salmon. The light and lemony flavor balances out the richness of the protein.

Falafel & Hummus are natural companions for tabbouleh! Add some warm pita bread for an easy Mediterranean feast.

Stuff it in a pita with grilled halloumi cheese and grilled or roasted vegetables. Yum!

Use it in a Grain Bowl: Tabbouleh, roasted chickpeas, feta, cucumbers and a drizzle of tahini dressing is a formula for a meat-free, feel-good feast.

Serve it with heartier, heavier dishes: If you're serving something rich, like moussaka, garlic-butter salmon, shawarmas or grilled steak, tabbouleh is a refreshing, vibrant contrast to all that richness.

Or just serve it on its own: Honestly, it’s so flavorful and satisfying, you can enjoy it straight from the bowl with a fork. 

Zesty, punchy and packed with superb herbs, tabbouleh pairs well with just about anything you’re serving, adding freshness to your feast with a taste of the Middle East!
