Each type has its own strengths, and knowing the differences can help you pick the best mayo for you. Here’s the scoop on the five main types:
1. Classic Mayonnaise (a.k.a. Hellman’s, the original)
This is the mayo sold everywhere, the one we all know and the kind I grew up with. Made with oil, egg yolks and vinegar or lemon juice, it’s rich, creamy and smooth. Pro? It has the best texture and flavor for just about any creamy dressing. Con? It’s definitely not the lightest option, clocking in at about 100 calories per tablespoon.
2. Olive Oil Mayonnaise
This version swaps out some of the vegetable oil for olive oil, making it a heart-healthier choice. The flavor is a little milder, a little fruitier and sometimes a bit thinner. Pro? A better fat profile with the benefits of olive oil. Con? Some brands still use cheaper oils as the base, so check the label!
3. Light or Reduced-Fat Mayonnaise
If you’re looking to cut calories, light mayo is about half the calories of regular mayo, thanks to added water, starches and stabilizers. Pro? Fewer calories, similar creamy texture. Con? The flavor isn’t quite as rich, and some versions can taste a bit tangy or slightly artificial. I really don’t mind it when it’s blended with other flavorful ingredients though.
4. Avocado Oil Mayonnaise
This mayo is made with avocado oil instead of vegetable oils, making it a trendy choice for keto or paleo diets. Pro? A cleaner ingredient list and healthy monounsaturated fats. Con? It’s pricier than regular mayo and has a slightly different flavor that some like and others loath.
5. Vegan Mayonnaise
No eggs? No problem. Vegan mayo swaps eggs for ingredients like aquafaba (which is the liquid from canned chickpeas) or pea protein to get that signature creamy texture. Pro? It’s plant-based and surprisingly close to the real deal. Con? While some brands nail the rich, tangy flavor of real mayo, others can be really lacking and, frankly, taste nothing like the original.
