Portable Blender Suggestions
One thing I learned while spending a year whipping up dressing after dressing is that whisking is fine, but blending is divine! What do I mean?
Well, if you make a lot of homemade salad dressings, which I expect you will now that you own this book, then investing in a small but mighty personal, portable, mini blender is a game-changer.
These small, single-serve blenders do more than just mix. They emulsify, which means they fully combine oil and vinegar so your dressing doesn’t separate five minutes after shaking it up.
Even if there’s no dairy involved, blending gives dressings a silky, almost creamy texture that just feels richer and fancier.
About a year ago, I bought a mini, portable blender to use for making protein shakes. These blenders are cordless and charge just like a phone or laptop, so I can blend my shake and drink it on the go since it fits in my cup holder. Brilliant!
One day it dawned on me to blend my salad dressings and see how they turn out. Well, they turned out AMAZING! They had a better consistency and texture than when I used a whisk or shook them up in a mason jar. I was impressed!
However, the blender doesn’t work for small quantities. If you’re making 1/3 cup dressing, for example, it’s just too little to blend properly.
If the dressing recipe makes ¾ cup to 1 cup dressing, try blending it and notice the difference. It also works much better with vinaigrettes than thick, creamy dressings made with mayo and Greek yogurt.
I don’t often recommend brands but I know you’ll ask! I own both the BlendJet and Ninja portable blenders and love them both.
