I could eat this salad every day and never get tired of it, since it contains all the elements of a perfect salad: color, crunch, texture, flavor and lip-smacking dressing. I love peanut-flavored ANYTHING. In fact, one time I made just the dressing and ate all of it with a spoon, like soup. Please don’t tell anyone. ☺

Other Uses for Peanut Dressing

If you’re lucky enough to have extra peanut dressing from my Thai Crunch Quinoa Salad, don’t let it go to waste!

Here are 10 tasty ways to use it:

1. Drizzle it over roasted or baked sweet potatoes. Sounds odd, tastes great!
2. Toss it with skinny noodles – Instant peanut noodle magic!
3. Use it as a dip for spring rolls.
4. Drizzle it over warm quinoa or brown rice with some roasted veggies for a peanutty grain bowl.
5. Toss it with shredded cabbage, carrots and green onions for an easy, flavorful slaw.
6. Pour it over boneless, skinless chicken thighs and bake them!

And this dressing isn’t done wowing your taste buds yet!

7. Use it as a stir-fry sauce or a dip for chicken satay.
8. Drizzle it on shrimp lettuce wraps.
9. Spread it on a pizza crust for a Thai-inspired pizza.

or 10. Pour it over cooked mini meatballs then sprinkle with chopped, fresh cilantro.
